Living on a college budget leaves little excess money for home renovation projects. Even though I absolutely love my current apartment, I can’t say that there aren’t a few choice changes I’d make if I could. My biggest pet peeve at the moment is my kitchen sink – I’m sure my current sink was put in at least 20 years ago, which makes cleaning around all the grouted areas absolutely miserable. If it were at all possible I would love have one of those undermounted stainless steel sinks that makes cleaning so much easier when you don’t have to deal with old cracking grout on a typical over mounted sink. Sadly by the time I have an actual job and could afford to make some renovations I don’t think I’ll be living in the same place. At least I will know what I am looking for in the next place I’ll be living.

I’ve only ever had to search for one apartment to live in during my time here at Virginia Tech. My parents were more interested in buying a place for me to live in after my freshman year on campus than renting for 3+ years while I’m going to school. Without knowing much about how important location, atmosphere, amenities, etc. are when selecting an apartment complex, I think I got really lucky with the place I ended up with. I’ve heard absolute horror stories from friends of mine who have had to deal with water damage in their apartments, horrible landlords, neighbors who party 6 out of 7 days of the week – the list just goes on. Due to the fact that you can’t really judge important aspects of an apartment just by looking at it or taking a realtors word that it’s a nice place to live, a person searching for an apartment should really check out some apartment ratings to get an idea of what kind of a place they’re looking at.

I just found a great recipe for a delicious (and relatively low fat) French Onion Dip. It can be made ahead of time and chilled before serving as an appetizer or a snack to munch on during a sports game. It’s really easy to put together. Here is a list of ingredients you’re going to need to get together before starting to prepare your dip:
- 1 tablespoon extra-virgin olive oil
- 4 cups chopped onions
- 3/4 teaspoon salt
- 1 14-ounce can reduced-sodium beef broth, or 1 3/4 cups mushroom broth
- 2 teaspoons granulated onion powder
- 2 tablespoons distilled white vinegar
- 1 cup reduced-fat sour cream
- 1/3 cup nonfat plain yogurt
And here are the preparation instructions:
Heat oil in a large skillet over medium-high heat. Add onions and salt; cook, stirring occasionally, until beginning to brown, 6 to 10 minutes. Add broth, scrape up any browned bits, and simmer until the liquid is almost evaporated, 10 to 20 minutes. Reduce heat to medium-low and cook until the onions are deep golden brown, 5 to 8 minutes more. Stir in onion powder, then stir in vinegar and cook until evaporated, 1 to 2 minutes. Remove from the heat and let cool for 20 minutes. Combine sour cream and yogurt in a medium bowl. Stir in the onion mixture. Chill for at least 30 minutes to blend flavors.
I like to bake slices of pita bread in the oven until they get crispy as a healthier alternative to using chips to use to dip with.
